
Ingredients
1 organic firm tofu
2 organic free range eggs
1 Tbsp olive oil
Juice of 1 lemon
1 cup spelt flour
1 tsp himalayan salt
1 courgette grated
1 large handful of spinach chopped quite fine
Directions
In a mixing bowl add the tofu and with a folk break it apart
Add all the remaining ingredients to the tofu and mix well
Heat a fry pan with olive oil or coconut oil
Place Tbsp mixture into the hot pan and cook each side until golden
