
Ingredients
250ml of warm water
2 tsp active yeast
3 Tbsp honey
420g of spelt flour
1/3 cup sultanas
2 tsp cinnamon
1 tsp mixed spice
Pinch of salt
Rind of one lemon and one orange
Juice from 1/2 orange
Directions
To a large bowl add the warm water, and the honey and yeast. Stir gently to combine and leave in a warm place for 15 minutes. After 15 minutes yeast should be fluffy looking.
Next add in spices, sultanas, spelt flour and the remaining ingredients and combine well.
On a floured surface, tip out the mixture and begin to knead for about 5 minutes.
Continue to knead until well combined. Create a large ball of dough and place back in the bowl. Cover with a tea towel and place somewhere warm to sit for about 20 minutes and allow to rise
Take the mixture out and knead a little more. Then split the mixture into balls and place on a lined baking tray.
You could glaze with a little honey dissolved in water, or an egg wash
Place in a pre heated oven of 180º for about 10-15min, until golden on top
