We love to make different flavour hummus in our household. Beetroot, pumpkin, roast pepper are delicious, but my all-time favourite is detox hummus. This vibrant green hummus is packed full of goodness and the perfect accompaniment with my walnut and oat crackers. Enjoys these crackers and hummus served up on tasting platter or as a healthy snack in the day.
Detox Hummus
Ingredients
1 can of chickpeas
2 large handfuls of spinach
1 large handful of kale leaves (de-stemmed)
Juice of 1 1/2 lemons
1 1/2 Tbsp Tahini
1-2 cloves of crushed garlic
1/2 tsp of sea salt (or himalayan pink salt)
2 Tbsp extra virgin olive oil
Directions:
Drain canned chickpeas but keep 1/4 cup of liquid from the can and add to food processor with chickpeas
Place all ingredients into food processor, blend for 2-3 minutes on low until mixed and smooth
