Chocolate Berry Xmas Bliss Balls
- 1 1/4 cup walnuts
- 1 cup almonds
- 1 cup pitted dates
- 1 cup coconut flakes
- 1 cup freeze dried raspberries
- 1/2 cup chocolate chips
- 1 Tbsp freeze dried raspberry powder
- 2 Tbsp raw cacao powder
- 1-2 Tbsp extra virgin coconut oil
- 100g dark chocolate (for the chocolate coating)
- Place all ingredients into a food processor except the the freeze dried raspberries and chocolate chips and process until the mixture starts to come together (if too dry add 1 Tbsp of coconut oil).
- Add in the chocolate chips and freeze dried raspberries and pulse a few times to combine.
- Take a handful of the mixture and roll into balls.
- Place the bliss balls in the fridge to set while you melt the chocolate.
- To make the chocolate, place a heat-proof bowl over a pot of boiling water (or use a double boiler). Place the chocolate into the bowl and melt slowly.
- Dip your chocolate berry bliss balls into the chocolate and coat fully. Place on a plate lined with baking paper and place in the freezer to set for at least 20 minutes or until the chocolate in harden.
- Remove from the freezer and drizzle chocolate over the top and then sprinkle with freeze dried raspberries.
- Place in the fridge to fully set.
