
Ingredients
Base
1 cup cashew nuts
1/2 cup almonds
1/2 cup shredded coconut
1 Tbsp Pure Coco Ltd Coconut nuts oil
1/2 cup frozen raspberries
1/3 cup Fresh As dried freeze raspberries
I tsp Fresh As Dried freeze raspberries powder
1/2 Tbsp organic maple syrup (optional)
Extra dried freeze powder to roll balls in
Berry Mousse
1 frozen banana
1 cup frozen raspberries
1/2 cup soaked cashew nuts (soaked over night)
1 tsp dried freeze raspberry powder
Directions
Base
In a food processor add nuts, shredded coconut, dried freeze powder, coconut oil
Process for a about 10-20 seconds to breakup nuts
Add in frozen raspberries and dried freeze raspberries and pulse a few times to mix through and mixture to come together
Press the mixture into a lines tin and place in the fridge while making the mousse
Berry Mousse
Add all ingredients into a food processor an blend until smooth and thick
Take the base out of the fridge and spread the mousse over the base
Set in the freeze for up to 4 hours before slicing and serve straight away
