Summer is certainly here and with the sun shining and long hot days, we are certainly changing up our eating habits. We are keeping our meals light with more fresh salads, smoothies and natural juices. It is one of my favourite times of the year to create nourishing and delicious recipes, using all the gorgeous fresh seasonal summer fruits and produce readily available.
My friends know I love a good breakfast and I truly believe it is the most important meal of the day. A nourishing breakfast with a good mix of protein, good fats and high fibre carbohydrates will ensure you feel energised and radiant throughout the whole day. In summer, one of my favourite recipes to make is my acai antioxidant smoothie bowl, topped with my homemade maple maqui berry buckwheat granola.
Smoothie bowls really are the Roll Royce of smoothies! Swapping your smoothie from a glass to a bowl means you can create a smoothie that is thick, creamy and can be topped with your favourite superfoods and toppings. It’s like a super healthy alternative to eating ice cream for breakfast – delicious!
In this smoothie bowl I use acai berry (I buy organic frozen acai puree which is available at most whole food outlets). This Amazonian superfood is ultra-rich in antioxidants, dietary fibre and omega fatty acids. A nutrient dense berry providing strong protection from free radical damage, whilst improving your energy and vitality.
My crunchy, nutty buckwheat granola is completely gluten free and has no unrefined sugars or preservatives. I have added another superfood berry, the maqui berry powder, into the granola. Like acai, the maqui berry is packed full of antioxidants. This granola is also wonderful served on its own with almond milk, a dollop of natural yoghurt and a selection of fresh berries. You may even enjoy it sprinkled on natural yoghurt to make a healthy snack during the day.
I know you will absolutely love my acai antioxidant smoothie bowl and maple maqui berry buckwheat granola, the perfect start to any morning. They will certainly become a summer time (well, anytime of the year) favourite breakfast.

Acai Antioxidant Smoothie Bowl
1 serving (100g packet) of frozen organic acai puree
1/2 cup fresh (or frozen) blueberries
1/2 cup frozen raspberries
1 frozen banana
1 Tbsp melted extra virgin coconut oil
Juice of 1/2 a lemon
1/2 cup of coconut water (or you can use a nut milk of your choice)
Frozen or fresh berries, chopped fruit, superfoods of your choice (e.g. coconut flakes, seeds, nuts, dried fruit, bee pollen…the choices are endless). I also like to add homemade muesli or granola, especially my maple maqui buckwheat granola.
Add all ingredients into a blender, except your chosen toppings, and process until thick and smooth.
Pour into a bowl and top with your favourite toppings.
