250gm tub ricotta
1/2 block of 200gm feta
1 Zucchini grated
4-5 handfuls of spinach chopped
Can add chopped rocket and parsley also
4 organic free range eggs whisked
Preheat oven 200º.
In a baking dish layer 6-7 sheets of filo, brushing a little olive oil between each one.
Add all ingredients into a bowl and mix well.
Pour mixture onto filo.
Roll the sides of the filo into the mixture and crinkle 2 more sheets of filo on top.
Brush with milk and sprinkle sesame seeds on top.
Place in oven for about 30 minutes at 180º (if starts to get a little to golden on the top cover with tin foil).
Serve with green salad.
