2 1/2 courgette
2 handfuls of spinach
1/4 cup gluten free flour
1/4 cup grated cheese
Juice of 1/2 lemon
Grate courgette in food processor with grater attachment or use a hand grater. I then added the S Blade, add spinach and process to make more fine.
Use nut bag or clean towel to squeeze excess water out of grated courgettes. Add all remaining ingredients to a bowl with courgette and mix well
Cook in a pan with coconut oil or olive oil until golden on each side
