I have been experimenting a lot recently with the chickpeas. This small legume is a mighty power house of nutrients, packed full of protein, folic acid, manganese and fibre.
Most people think of chickpeas as being used in savoury dishes and for most when you think dessert, chickpeas is not the main ingredient that comes to mind!
Believe it or not, the hearty little chickpea is a great addition to sweet treats. I love using them in my chocolate brownies. Not only do they add a great amount of nutrients, they add a great texture and taste to my brownies. These dark chocolate brownies are vegan, free from dairy and eggs, plus with the addition of walnut flour wheat they are also gluten free.
You will be completely surprised by the delicious and chocolatey taste of these brownies and you would never suspect they were made from chickpeas. Enjoy these healthy chocolate brownies with avocado frosting, you will not feel so guilty if you have seconds!
2 cans of organic chickpeas (rinsed and drained)
1 1/2 cup walnut flour (if nut free use 1 1/2 cups of rolled oats)
2 tsp baking powder
1/2 tsp baking soda
1/2 cup raw cacao powder
4 Tbsp. melted extra virgin coconut oil
1/4 cup coconut nectar syrup
2 tsp pure vanilla extract
1/2 tsp Himalayan pink salt
1 Tbsp. organic peanut butter or for nut free use sunflower seed butter
1/2 a 200g bar of organic dark chocolate chopped or you can use organic chocolate chips (leave some for the topping)
Place your chickpeas into the food processor and process for about 30 seconds.
Add all the remaining ingredients, except chopped dark chocolate, into the food processor and blend until a fairly smooth consistency (the mixture will be quite thick). If you are using rolled oats instead of walnut flour add the rolled oats to the food processor before you add the chickpeas and process until you create a fairly fine flour.
Remove the blade and mix through chopped chocolate (you can also add some chopped walnuts if you like).
Pour into a greased (I use coconut oil) slice tin and spread the mixture our evenly.
Bake for 20 minutes in a pre-heated oven at 165C.
While the brownies are cooling make the avocado frosting. Once the brownies have fully cooled spread over the frosting and sprinkle over your toppings.
Chocolate Avocado Frosting
2 ripe avocados
1/3 cup pure maple syrup
1 tsp vanilla extract
1/2 cup raw cacao powder
Add all ingredients into a blender and process until smooth.
