Chickpea chocolate chip mega cookie 🍪
I know you might be thinking chickpeas? but this chickpea cookie tasted so good and packed full of protein and wholesome ingredients, making it a healthy sweet treat!
This recipe is flour, egg and dairy free.
2 cans of organic chickpeas (rinse)
1 cup rolled oats
4 Tbsp Pure Coco Ltd coconut oil
1/2 cup Natvia New Zealand natural sweetener or coconut sugar
2 tsp pure vanilla extract
1/2 tsp Himalayan pink salt
2 tsp baking powder
1/2 tsp baking soda
1/2 bar chopped organic dark chocolate
Add everything to a food processor except chocolate and blend until smooth. Remove made and mix through chopped chocolate
Pour into a greased baking tin- I use a cake tin
Bake 190 degrees for 35 min or until golden brown on the top
