1 head of cauliflower
Use 1 head of cauliflower, cut into florets (remove stem)
Place in steamer and steam for a few minutes, not too soft
Add to a food processor with a grater attachment and grate the florets. I then add S Blade to make finer
Place into a clean tea towel or nut bag and squeeze as much water out as possible.
Place in a bowl and mix in two eggs and salt (can add herbs also)
Place spoonful of mixture onto a lined baking tray and spreed out to form a tortilla shape. Don’t make too thick.
Place in a pre heat over 200 degrees for 10 minutes, then flip over and bake another 7 minutes
